Pumpkin Pie Parfait

My oldest daughter loves pumpkin pie, and she has been bugging me to make some for a while.  I know Thanksgiving is next week and she will get it then, but I thought why not make a yummy pumpkin pie parfait for us to enjoy before then.  I actually took the pumpkin part of my Double Layer Pumpkin Pie recipe to make this, I suppose I could have used that whole recipe and just turned it into parfaits but I was going for easy so just used whip cream for the middle layer.

As usual the girls helped make this, they sure do love to cook and get so excited when we make recipes.  It was their idea to add the sprinkles on top since sprinkles make everything better, at least that is what my girls say!

If you want to make this recipe really light and sugar free you can, just use sugar free pudding and whip cream.  So if you have someone over for Thanksgiving or Christmas that is on a sugar free diet this is a quick and easy dessert you can make for them.  you could also make it gluten free just my not adding the gram crackers.  Can you tell I have family members that are diabetic and gluten free?

Supplies

Gram Crackers
1 Can (16 ounces) Pumpkin
2 Packages (4 servings) Instant Vanilla Pudding
1 Cup Milk
1 tsp Pumpkin Pie Spice
Whip Cream

Directions

Pumpkin Pie ParfaitUse a rolling pin to mash up your gram crackers

Pumpkin Pie ParfaitSprinkle your crushed gram crackers in the bottom of your dish

Pumpkin Pie ParfaitPour all other ingredients in to a bowl and mix

IMG_81641Layer your dish with a layer of pumpkin pie, then whip cream, then pumpkin pie

Pumpkin Pie ParfaitWhen ready to serve top with more whip cream and sprinkles

Pumpkin Pie ParfaitThen eat and enjoy your delicious treat!
