Groundhog Day Cupcakes
Last year for Groundhogs day we made some yummy pudding cups, this year I thought it would be cute to make these Groundhog Day Cupcakes instead.  We just used regular box cake mix and ready made frosting for these, but the girls decorated them. If you are having a party for/on Groundhogs day these would be really cute to bring, they are super easy to make and all the kids will love them.

As I have said before in some previous posts Groundhogs Day is my birthday so I always like to do fun stuff with the kids and help them to understand what the holiday is all about.  This year we made these fun Shadow Plates and took them outside so the girls could see if their groundhogs saw their shadows.    Then we came in and made these yummy cupcakes.  On actual groundhogs day I plan to take them outside to look for groundhogs and then based on weather or not we can see our shadows decide if it will be a long winter or and early spring!

Supplies

Chocolate Cake Mix (could use any mix you like)
Chocolate Frosting (Can use any kind you like)
Candy Eyeballs
Pink M&M’s
Mini Marshmallows cut in half length wise
Mini Nilla Wafers (2 for each cupcake)
Cupcake  Liners

Directions

Groundhog Day CupcakesPut cupcake liners in your cupcake pan
Make your boxed cake mix according to directions then pour into cupcake holders and bake according to directions
Once cupcakes are cool, frost them with chocolate frosting

Groundhog Day CupcakesThen decorate using 2 candy eyes, one M&M (for nose) and one marshmallow cut in half for teeth, and two mini Nilla wafers for earsGroundhog Day Cupcakes
