Gingerbread Man Pancakes

I just love gingerbread cookies, and well so does my entire family.  A few years ago my dad gave me this recipe to turn any pancake mix into a gingerbread pancake mix.  It is such an easy recipe that I have been making it ever since.

This weekend I thought it would be fun to make this recipe for the girls and use our cookie cutters to actually make them into little gingerbread men.  It worked great and both of them were so excited for breakfast (hey a meal with no fighting… score!).  So I thought I would make a ton and have left overs to feed them breakfast all week, well that was until my hubby figured out what kind of pancakes they were. Yep you guessed it they are all gone, so much for my brilliant idea.

I have to say that I have tried this recipe with Bisquick pancake mix and one homemade recipe I have and it turned out super yummy with both.  Keep in mind that with both recipes I used they were for about 10-12 pancakes (that is what the recipes say, I never make them small enough to get that many) so if you are making more you might need to double up on the amounts listed below.

Supplies

Any Pancake Recipe
1 teaspoon ground ginger
1 teaspoon ground cinnamon
3 tablespoons molasses
Gingerbread Man Cookie Cutter (optional)
Sprinkles (optional)

Directions

gingerbread man pancakesAdd your ginger, cinnamon, and molasses to any pancake recipe and stir until well blended.

IMG_80731Grease your cookie cutters and place on pan, then pour your pancake mix into them.
NOTE: Don’t fill them, the pancakes will puff up while they cook.

IMG_80751Remove your cookie cutters before flipping pancakes.

    Another pancake recipe to add to our collection. We love pancakes in our home. I’ve never tried gingerbread, though. The trend in our home lately has been peanut butter. Something new might be in order.

      Oh they would! And you can make them the night before and just reheat so you don’t have to be cooking Christmas morning! That is what I will be doing anyway!

    My mom used to make pancakes with a Mickey Mouse cookie cutter. I loved them so much :).
    I’ve never made pancakes with molasses before! Will have to try it out.
