Banana Pancakes

This weekend I found myself with two very ripe bananas again, but wanted to make something different than my banana muffins (which is always what I end up making with my ripe bananas, because they are so yummy).  So I thought why not try out some banana pancakes and see how they turn out.  So that is what I did, and well they were yummy.

When I first told my 4yr old that I was making banana pancakes she said yucky and that she did not like it.  This seems to be the response I get when ever I try something new.  So I ended up telling her it was a trick and they were regular pancakes and she just ate them up then.  Kids are so funny, and as she gets older she is getting picker and picker.  Was I this bad as a kid?  I will have to ask my parents.

½ cup all-purpose flour
1 egg
½ cup whole wheat flour
1 cup milk
1 tbs brown sugar
2 tbs applesauce
2 tsp baking powder
½ tsp vanilla extract
¼ tsp salt
2 ripe bananas, mashed


 Combine both flours, brown sugar, baking powder, and salt.  In a separate bowl, mix egg, milk, applesauce, vanilla extract, and bananas.
 Stir banana mixture into the flour mixture; batter will be slightly lumpy.
 Heat a lightly oiled griddle or frying pan over medium high heat.  Pour the batter onto the griddle ¼ cup for each pancake.  Flip banana pancakes once the batter starts to bubble. Cook until pancakes are golden brown on both sides.
 My girls loved the pancakes, I am sure you will too!
