With the holidays upon us, I like to remember all my favorite holidays of the past.  Most of my fond memories are of spending them with my family.  This year for Thanksgiving we got to spend it with some friends that came over. I always find it interesting what side dishes are family traditions, it seems like every family has something different on the menu.

Our family has always had baked macaroni and cheese for the holidays.  As a matter of fact I think we would be pretty upset if we did not get this one year, so much so that on the years we are all apart (like this year) my mother, sister, and I all made it for our own Thanksgiving meals.  My husband thinks it is strange, his family has never had this for the holidays, but I must say that he loves it and never complains when I make it.  So with Christmas fast approaching, you may want to consider adding this to your menu planning I know it will be a huge hit and who knows maybe it will be a new tradition for you.


  1 package (8 ounces) elbow macaroni
  1/4 cup butter or margarine
  1/4 cup all-purpose flour
  1 teaspoon salt
  1/8 teaspoon pepper
  2 cups milk
  2 cups (8 ounces) cheddar cheese, grated
Preheat oven to 375 F.  Cook macaroni as the package label directs; drain.
Meanwhile, melt butter in a medium sauce pan; remove from heat.  Stir in the flour, salt, and pepper until smooth. Gradually stir in milk. Bring to boiling, stirring. Reduce heat, and simmer mixture 1 minute.  Remove from heat.

 Stir in 11/2 cups cheese and the macaroni.  Pour into a 11/2 quart casserole dish, and sprinkle remaining cheese over top.
Bake 15 to 20 minutes, or until cheese is golden brown.

 Yep, all the kids loved it.  This means no fights to get them to stop playing and eat there dinner.
